Baked Dijon Salmon



Cooking Tip: For all you pomegranate lovers... Chop the fruit in half. Take a tablespoon and hit the back of the chopped fruit. The fruit will fall out in no time. Be sure to do it over a chopping board or a dark surface as the juice of the fruit can stain.

Training Tip: Rest days are important too. Now that it's the new year and you probably have a lot of motivation to achieve your health and fitness goals it's important to remember that rest days are vital to success. These days give your muscles a chance to repair and recover. Don't forget to rest, get plenty of sleep and hydrate on these days!

Mindset Tip: Set yourself the task of achieving the most important thing for that day everyday. If you can achieve this you will have had 365 important things at least achieved in that year. Crazy right? Starts with one task..



No-Bake Cheesecake Cookies

"This is a wonderful way to prepare fresh salmon fillets in the oven. Be sure to make extra, your family will be begging for more!"




  • 1/4 cup butter, melted
  • 3 tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 1/4 cup dry bread crumbs
  • 1/4 cup finely chopped pecans
  • 4 teaspoons chopped fresh parsley
  • 4 (4 ounce) fillets salmon
  • salt and pepper to taste
  • 1 lemon for garnish



Step 1 - Preheat oven to 400 degrees F (200 degrees C).

Step 2 - In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.

Step 3 -Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.

Step 4 - Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.


Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
